Fried Rice
Fried rice is basically taking leftover rice and cooking it with whatever you have available in your kitchen.

- Cooking time: 5-15 min
- Total time: 5-20 min
Ingredients
Here is a list of ingredients that I have used in fried rice:
Cooking fats and oils
- Plant based oils (olive, coconut, peanut, etc)
- Animal based oils (bacon, duck, chicken, etc)
Early ingredients
Late ingredients
- Leafy Greens
- Any leftovers, chopped into smaller pieces
- Frozen veggies (peas, corn, spinach)
Sauces
- Soy sauce
- Hoi Sin Sauce
- Worchestershire Sauce
- Biryani Paste
- Leftover sauces
Day old rice
- Dry rice is better for fried rice
General steps
- Start with Oil or Fat
- Add early ingredients
- Add late ingredients
- Add sauces
- Add rice
- Add sauces
Special directions
Eggs are usually scrambled first in the oil and removed, adding it back when you add the rice. This avoids overcooking the eggs.
Variations that I have made:
Bacon, Onions and Egg
- Oil and Bacon, wait until fat rendered
- Cook egg and remove from pan
- Cook onions
- Add egg and rice
- Soy sauce
Swiss Chard, Leftover Baked Potatoes and Carrots, Egg
- Chop and separate swiss chard into stems and leaves
- Add oil
- Cook egg and remove from pan
- Add garlic
- Add swiss chard stems, cook for a few mins
- Add potatoes and carrots
- Add swiss chart leaves and cover for a few mins
- Add egg and rice
- Sauces
